Method
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl beat butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs and vanilla extract and mix until smooth.
- In another bowl mix flour, baking soda, and salt.
- Gradually add the dry mixture into the wet ingredients and mix until combined.
- Fold in shredded coconut, chopped almonds, and chocolate chips.
- Scoop cookie dough onto prepared baking sheet leaving space between each cookie.
- Bake for 10 to 12 minutes until edges turn golden brown.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a rack.
Notes
Use parchment paper to prevent cookies from sticking.
Do not overbake; cookies stay soft when centers look slightly underbaked.
Toast almonds lightly before mixing for a stronger nut flavor.
