Ingredients
  

  • 1 cup butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups sweetened shredded coconut
  • 1 cup chopped almonds
  • 1 1/2 cups chocolate chips

Method
 

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl beat butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs and vanilla extract and mix until smooth.
  4. In another bowl mix flour, baking soda, and salt.
  5. Gradually add the dry mixture into the wet ingredients and mix until combined.
  6. Fold in shredded coconut, chopped almonds, and chocolate chips.
  7. Scoop cookie dough onto prepared baking sheet leaving space between each cookie.
  8. Bake for 10 to 12 minutes until edges turn golden brown.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a rack.

Notes

Use parchment paper to prevent cookies from sticking.
Do not overbake; cookies stay soft when centers look slightly underbaked.
Toast almonds lightly before mixing for a stronger nut flavor.
Store cookies in an airtight container for up to 4 days.
