Ingredients
  

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • ¾ cup brown sugar
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¾ cup unsalted butter melted
  • 2 cups apples peeled and diced
  • 1 cup blackberries fresh or frozen
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 180°C (350°F) and line a baking dish with parchment paper
  2. Mix oats, flour, brown sugar, baking soda, cinnamon, and salt in a bowl
  3. Add melted butter and stir until crumbly texture forms
  4. In another bowl mix apples, blackberries, sugar, cornstarch, and vanilla
  5. Press two-thirds of oat mixture firmly into the baking dish
  6. Spread fruit mixture evenly over the base layer
  7. Sprinkle remaining oat mixture on top without pressing
  8. Bake for 35–40 minutes until golden brown
  9. Allow to cool completely before slicing into bars

Notes

Use rolled oats for the best texture, not instant oats
Let bars cool fully to avoid crumbling when cutting
Adjust the sugar based on the sweetness of the fruit
Store in an airtight container for up to 5 days
Can be frozen for longer storage
