Ingredients
  

  • 2 cups fresh strawberries sliced
  • 2 medium apples peeled and diced
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold butter cubed
  • 2/3 cup milk
  • 1 tsp vanilla extract
  • 1 cup whipped cream

Method
 

  1. Preheat oven to 200°C (400°F)
  2. Mix strawberries, apples, sugar, cinnamon, and lemon juice and let sit
  3. Combine flour, sugar, baking powder, and salt in a bowl
  4. Cut in cold butter until crumbly texture forms
  5. Add milk and vanilla extract and mix gently
  6. Drop spoonfuls of dough onto baking tray
  7. Bake for 12–15 minutes until golden brown
  8. Slice shortcakes and layer with fruit mixture and whipped cream
  9. Top with more cream and serve immediately

Notes

Use cold butter for best texture
Do not overmix the dough to keep it soft
Let the fruit sit to release natural juices
Serve fresh for the best taste
Add extra whipped cream for a richer flavor
