Baked Feta Pasta Recipe

Creamy, cheesy, and insanely easy, this baked feta pasta is perfect for a quick weeknight dinner. Minimal ingredients, minimal effort, maximum flavor! Ingredients
  

  • 8 oz pasta penne, rigatoni, or your choice
  • 1 block feta cheese 7–8 oz
  • 2 cups cherry or grape tomatoes
  • 3 –4 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes optional
  • Salt and black pepper to taste
  • Fresh basil for garnish (optional)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Place cherry tomatoes in a baking dish, drizzle with olive oil, add garlic, oregano, red pepper flakes, salt, and pepper.
  3. Put the block of feta in the center and drizzle with a little olive oil.
  4. Bake for 30–35 minutes until tomatoes burst and feta is soft.
  5. Cook pasta according to package instructions, reserving ½ cup pasta water.
  6. Mash baked feta and tomatoes together to form a creamy sauce.
  7. Toss cooked pasta in the sauce, adding reserved pasta water if needed.
  8. Garnish with fresh basil and serve immediately

Notes

Use a block of feta, not crumbled; salt pasta water; add veggies or protein if desired; leftovers store in fridge 3–4 days.
