Method
- Preheat oven to 400°F (200°C).
- Place cherry tomatoes in a baking dish, drizzle with olive oil, add garlic, oregano, red pepper flakes, salt, and pepper.
- Put the block of feta in the center and drizzle with a little olive oil.
- Bake for 30–35 minutes until tomatoes burst and feta is soft.
- Cook pasta according to package instructions, reserving ½ cup pasta water.
- Mash baked feta and tomatoes together to form a creamy sauce.
- Toss cooked pasta in the sauce, adding reserved pasta water if needed.
- Garnish with fresh basil and serve immediately
Notes
Use a block of feta, not crumbled; salt pasta water; add veggies or protein if desired; leftovers store in fridge 3–4 days.
