Ingredients
  

  • Ripe bananas – 3 medium about 300g mashed
  • All-purpose flour – 120g 1 cup
  • Granulated sugar – 100g ½ cup
  • Melted butter or vegetable oil – 60ml ¼ cup
  • Egg – 1 large 50g
  • Milk – 60ml ¼ cup
  • Vanilla extract – 2.5ml ½ tsp
  • Baking soda – 2g ½ tsp
  • Baking powder – 2g ½ tsp
  • Salt – 1g ¼ tsp
  • Ground cinnamon – 1g ½ tsp, optional
  • Chocolate chips or chopped nuts – 75g ½ cup, optional

Method
 

  1. Preheat oven to 180°C (350°F) and grease a loaf pan or baking dish.
  2. Mash ripe bananas in a large bowl until mostly smooth.
  3. Add melted butter, egg, milk, and vanilla extract and mix well.
  4. In another bowl combine flour, sugar, baking soda, baking powder, salt, and cinnamon.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Fold in chocolate chips or nuts gently without overmixing.
  7. Pour batter into prepared pan and spread evenly.
  8. Bake for 30–35 minutes until a toothpick inserted comes out clean.
  9. Allow dessert to cool for 10–15 minutes before slicing and serving.

Notes

Use overripe bananas for maximum sweetness and moisture.
Do not overmix batter to keep texture soft and fluffy.
Store leftovers in an airtight container for up to 3 days at room temperature.
You can substitute milk with almond or oat milk for a dairy-free version.
