Method
- Heat oil in a pan over medium heat and sauté onion and garlic until soft.
- Add ground beef and cook until browned, seasoning with salt, pepper, paprika, and cumin.
- Stir in diced tomatoes with juice and simmer for 5 minutes.
- Add rice and beef broth, stir once, cover, and cook according to rice package instructions.
- Fluff rice with a fork, adjust seasoning if needed, and sprinkle with parsley or cilantro.
- Serve hot and enjoy!
Notes
You can swap ground beef with chicken, turkey, or lentils for a lighter or vegetarian version; add bell peppers or peas for extra veggies; top with cheese or a fried egg for extra comfort.
