Ingredients
  

  • 1 lb 450g ground beef
  • 1 cup uncooked rice
  • 1 can 14 oz diced tomatoes, juice included
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup beef broth or water
  • 1 –2 tbsp olive oil or cooking oil
  • Fresh parsley or cilantro chopped (optional)

Method
 

  1. Heat oil in a pan over medium heat and sauté onion and garlic until soft.
  2. Add ground beef and cook until browned, seasoning with salt, pepper, paprika, and cumin.
  3. Stir in diced tomatoes with juice and simmer for 5 minutes.
  4. Add rice and beef broth, stir once, cover, and cook according to rice package instructions.
  5. Fluff rice with a fork, adjust seasoning if needed, and sprinkle with parsley or cilantro.
  6. Serve hot and enjoy!

Notes

You can swap ground beef with chicken, turkey, or lentils for a lighter or vegetarian version; add bell peppers or peas for extra veggies; top with cheese or a fried egg for extra comfort.
