Ingredients
Method
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- Place the hollow peppers upright in a baking dish.
- Heat olive oil in a skillet over medium heat.
- Add diced onion and cook for 2–3 minutes until softened.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook until browned while breaking it apart.
- Drain excess fat if needed.
- Mix in cooked rice, tomato sauce, Italian seasoning, paprika, salt, and black pepper.
- Cook the mixture for 2–3 minutes to combine flavors.
- Spoon the beef mixture into each pepper until filled.
- Top each pepper with shredded cheese.
- Bake for 30–35 minutes until peppers are tender and cheese is melted.
- Remove from oven and garnish with fresh parsley if desired.
Notes
Use red or yellow peppers for a sweeter flavor.
Green peppers work well but have a slightly stronger taste.
You can substitute ground turkey or chicken for a lighter version.
Cooked quinoa or cauliflower rice can replace regular rice.
