BEEF STUFFED PEPPERS RECIPE

Ingredients
  

  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 tablespoon olive oil
  • Fresh parsley chopped optional

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. Place the hollow peppers upright in a baking dish.
  4. Heat olive oil in a skillet over medium heat.
  5. Add diced onion and cook for 2–3 minutes until softened.
  6. Stir in minced garlic and cook for 30 seconds until fragrant.
  7. Add ground beef and cook until browned while breaking it apart.
  8. Drain excess fat if needed.
  9. Mix in cooked rice, tomato sauce, Italian seasoning, paprika, salt, and black pepper.
  10. Cook the mixture for 2–3 minutes to combine flavors.
  11. Spoon the beef mixture into each pepper until filled.
  12. Top each pepper with shredded cheese.
  13. Bake for 30–35 minutes until peppers are tender and cheese is melted.
  14. Remove from oven and garnish with fresh parsley if desired.

Notes

Use red or yellow peppers for a sweeter flavor.
Green peppers work well but have a slightly stronger taste.
You can substitute ground turkey or chicken for a lighter version.
Cooked quinoa or cauliflower rice can replace regular rice.
Add chili flakes if you like a little spice.
