Method
- Slice beef thinly and mix with soy sauce and cornstarch, let it marinate for 10–15 minutes
- Heat oil in a pan or wok over medium-high heat
- Add beef in a single layer and cook for 2–3 minutes until browned
- Remove beef from pan and set aside
- Add vegetables to the same pan and stir-fry for 3–5 minutes
- Add garlic and ginger and cook for 30 seconds until fragrant
- Return beef to the pan and mix well
- Add oyster sauce, sugar, black pepper, and water
- Stir everything together and cook for 2–3 minutes until well coated
- Garnish with green onions and serve hot
Notes
Slice beef against the grain for maximum tenderness
Do not overcrowd the pan to avoid steaming instead of frying
