Method
- Preheat oven to 375°F (190°C) and line a 9×9 baking pan with parchment paper.
- In a large bowl mix flour, sugar, baking powder, and salt.
- Add cold cubed butter and cut into the flour mixture until crumbly.
- Mix in the egg and vanilla extract until a crumbly dough forms.
- Press two-thirds of the dough firmly into the bottom of the prepared baking pan to form the crust.
- In another bowl mix berries, sugar, and cornstarch until coated evenly.
- Spread the berry mixture evenly over the crust layer.
- Sprinkle the remaining crumble dough over the berry layer.
- Bake for 35–40 minutes or until the top becomes golden brown.
- Allow the bars to cool completely before slicing into squares.
Notes
Use fresh or frozen berries depending on what you have available.
Do not thaw frozen berries before using to avoid extra moisture.
Let the bars cool fully before cutting so they hold their shape.
