Method
- In a bowl, mix cookie butter, crushed cookies, and powdered sugar until combined.
- Roll mixture into small balls and place on a parchment-lined tray.
- Freeze balls for 10-15 minutes to firm up.
- Melt chocolate chips with coconut oil until smooth.
- Dip each ball into melted chocolate and place back on parchment paper.
- Optionally, sprinkle extra crushed cookies on top.
- Chill truffles in the fridge for 20 minutes before serving.
Notes
- Use room-temperature cookie butter for easier mixing.
- Store truffles in an airtight container in the fridge for up to 1 week.
- For extra flavor, add a pinch of sea salt on top of the chocolate coating.
