Ingredients
  

  • 1 cup Biscoff cookie butter
  • 1 cup crushed Biscoff cookies
  • 1/2 cup powdered sugar
  • 1 cup dark chocolate or milk chocolate chips
  • 1 tsp coconut oil optional
  • Extra crushed cookies for coating optional

Method
 

  1. In a bowl, mix cookie butter, crushed cookies, and powdered sugar until combined.
  2. Roll mixture into small balls and place on a parchment-lined tray.
  3. Freeze balls for 10-15 minutes to firm up.
  4. Melt chocolate chips with coconut oil until smooth.
  5. Dip each ball into melted chocolate and place back on parchment paper.
  6. Optionally, sprinkle extra crushed cookies on top.
  7. Chill truffles in the fridge for 20 minutes before serving.

Notes

  • Use room-temperature cookie butter for easier mixing.
  • Store truffles in an airtight container in the fridge for up to 1 week.
  • For extra flavor, add a pinch of sea salt on top of the chocolate coating.
