Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • 2 –3 tbsp sugar
  • 1 egg yolk
  • 2 –3 tbsp cold water
  • Pinch of salt
  • 3 –4 ripe bananas sliced
  • ½ cup brown sugar
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 1 tsp cinnamon optional
  • Honey optional drizzle
  • Chopped nuts optional topping

Method
 

  1. Mix flour, sugar, and salt in a bowl, then add cold butter and rub until crumbly.
  2. Add egg yolk and cold water gradually to form dough, then chill for 20 minutes.
  3. Roll dough, place in tart pan, and prick with a fork.
  4. Bake crust at 180°C for 10–12 minutes until lightly golden.
  5. Melt butter and brown sugar in a pan to form caramel.
  6. Add bananas, cook for 2–3 minutes, then mix in vanilla and cinnamon.
  7. Pour caramelized bananas into baked crust evenly.
  8. Bake again for 10–15 minutes until golden and bubbling.
  9. Let cool before slicing and serving.

Notes

  • Use ripe bananas for the best caramel sweetness and soft texture.
  • Don’t overcook caramel—it can turn bitter very quickly.
  • Chill the dough properly for a flaky crust.
  • Best served slightly warm with ice cream for extra indulgence.
