Ingredients
  

  • 6 large eggs
  • 1 cup fresh spinach chopped
  • ½ cup shredded cheddar cheese
  • ¼ cup milk
  • Salt to taste
  • Black pepper to taste
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Cooking spray or oil

Method
 

  1. Preheat oven to 180°C (350°F)
  2. Grease a muffin tin with cooking spray or oil
  3. Whisk eggs, milk, salt, pepper, garlic powder, and onion powder in a bowl
  4. Stir in chopped spinach and shredded cheddar cheese
  5. Pour mixture evenly into muffin cups (¾ full)
  6. Bake for 18–22 minutes until set and lightly golden
  7. Let cool for 5 minutes before removing from the pan

Notes

Do not skip greasing the muffin tin to avoid sticking
Do not overbake, or muffins will become dry
Spinach will shrink during baking, so do not worry if it looks like a lot
Store leftovers in the fridge for up to 4 days
Reheat in microwave for 20–30 seconds before serving
