Ingredients
  

  • Cooked chicken shredded – 2 cups
  • Cornbread crumbled – 3 cups
  • Onion diced – 1 medium
  • Celery chopped – 2 stalks
  • Butter – 4 tablespoons
  • Chicken broth – 1½ cups
  • Eggs – 2 large
  • Garlic powder – 1 teaspoon
  • Poultry seasoning – 1 teaspoon
  • Salt – ½ teaspoon
  • Black pepper – ½ teaspoon
  • Fresh parsley optional – 1 tablespoon

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Melt butter in a skillet and cook onion and celery until soft.
  3. In a large bowl combine crumbled cornbread and shredded chicken.
  4. Add cooked vegetables to the bowl and mix gently.
  5. Stir in garlic powder, poultry seasoning, salt, and black pepper.
  6. Pour in chicken broth slowly and mix until moist but not soggy.
  7. Add eggs and mix until well combined.
  8. Grease a baking dish and spread the mixture evenly.
  9. Bake for 35–40 minutes until golden on top.
  10. Let rest for 5–10 minutes before serving.

Notes

Slightly dry cornbread works best for texture.
Rotisserie chicken makes this recipe quicker and easier.
Add a little extra broth if the mixture looks too dry.
You can add cooked sausage for extra flavor.
Leftovers taste even better the next day.
