Ingredients
  

  • 2 cups cooked or diced chicken breast
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup cream of chicken soup
  • 1/2 cup milk
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil or butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika optional
  • 1/2 cup frozen peas or mixed vegetables optional
  • Fresh parsley chopped for garnish

Method
 

  1. Preheat oven to 375°F (190°C)
  2. Lightly grease a casserole baking dish
  3. In a large bowl mix rice chicken broth cream of chicken soup milk onion garlic salt pepper and paprika
  4. Add the chicken and stir until well combined
  5. Pour the mixture evenly into the casserole dish
  6. Cover the dish with foil and bake for 40 minutes
  7. Remove foil sprinkle cheddar cheese on top and bake another 10 to 15 minutes
  8. Let the casserole rest for 5 minutes before serving
  9. Garnish with fresh parsley and serve warm

Notes

You can use rotisserie chicken to save time
Add extra vegetables like broccoli or carrots for more nutrition
For a creamier texture, mix a little extra cheese into the casserole before baking
If using brown rice, add extra broth and increase cooking time
Letting the casserole rest helps the rice finish absorbing the flavor
