Ingredients
  

  • 250 g pasta penne or fettuccine
  • 2 chicken breasts sliced
  • 2 cups fresh spinach
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 2 tbsp olive oil
  • 1 tbsp butter
  • Salt to taste
  • Black pepper to taste
  • 1/2 tsp chili flakes optional

Method
 

  1. Boil pasta in salted water until al dente, then drain and set aside.
  2. Heat olive oil in a pan and cook chicken until golden and fully cooked.
  3. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Add spinach and cook until wilted.
  5. Pour in heavy cream and mix well.
  6. Add Parmesan cheese and stir until sauce becomes creamy.
  7. Toss in cooked pasta and mix until fully coated.
  8. Adjust seasoning and sprinkle chili flakes before serving.

Notes

  • Don’t overcook pasta or it will turn mushy in the sauce.
  • Fresh garlic makes a huge difference in flavor intensity.
  • Add extra cream if sauce becomes too thick.
  • You can swap chicken with mushrooms for a vegetarian version.
  • Best served immediately while creamy and hot.
