Method
- Preheat oven to 350°F (175°C).
- Cream butter and sugars until smooth.
- Add eggs and vanilla, mixing well.
- Stir in cottage cheese until combined.
- Whisk flour, baking soda, and salt; fold into wet mixture.
- Fold in chocolate chips (and nuts if using).
- Scoop dough onto lined baking sheet, 2 tbsp each, leaving space.
- Bake 10–12 minutes until edges are lightly golden.
- Cool 5 minutes on sheet, then transfer to wire rack.
Notes
- Drain cottage cheese if too watery to avoid soggy dough.
- Don’t overmix dough; cookies stay soft and chewy.
- Use room temperature butter for best results.
- Cookies firm up as they cool, so avoid overbaking.
- Optional nuts add crunch, but chocolate chips are mandatory.
