Ingredients
  

  • 1 cup unsalted butter softened
  • 3/4 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup cottage cheese
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups chocolate chips
  • Optional: 1/2 cup chopped nuts

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugars until smooth.
  3. Add eggs and vanilla, mixing well.
  4. Stir in cottage cheese until combined.
  5. Whisk flour, baking soda, and salt; fold into wet mixture.
  6. Fold in chocolate chips (and nuts if using).
  7. Scoop dough onto lined baking sheet, 2 tbsp each, leaving space.
  8. Bake 10–12 minutes until edges are lightly golden.
  9. Cool 5 minutes on sheet, then transfer to wire rack.

Notes

  • Drain cottage cheese if too watery to avoid soggy dough.
  • Don’t overmix dough; cookies stay soft and chewy.
  • Use room temperature butter for best results.
  • Cookies firm up as they cool, so avoid overbaking.
  • Optional nuts add crunch, but chocolate chips are mandatory.
