Ingredients
  

  • 1 pre-made or homemade pie crust
  • 2 cups milk
  • ½ cup sugar
  • ¼ cup unsweetened cocoa powder
  • 3 tbsp cornstarch
  • 2 egg yolks
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup whipped cream for topping

Method
 

  1. Pre-bake the pie crust according to package or recipe instructions and let cool.
  2. In a saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
  3. Gradually add milk while stirring until smooth.
  4. Cook over medium heat, stirring constantly, until mixture thickens.
  5. Beat egg yolks in a separate bowl, then slowly add a small amount of hot chocolate mixture to temper.
  6. Return egg mixture to saucepan and cook 1–2 minutes more.
  7. Remove from heat and stir in vanilla extract.
  8. Pour chocolate pudding into cooled pie crust.
  9. Chill in the refrigerator for at least 2 hours.
  10. Top with whipped cream before serving.

Notes

  • Use high-quality cocoa for the best chocolate flavor.
  • Chill thoroughly to allow the pudding to set properly.
  • Optional: sprinkle shaved chocolate or chocolate chips on top for garnish.
