- Preheat oven to 180°C (350°F)
- Mix graham crumbs, melted butter, and 2 tbsp sugar
- Press mixture into a springform pan and bake 10 minutes
- Beat cream cheese until smooth and creamy
- Add remaining sugar and mix well
- Add eggs one at a time and mix gently
- Stir in sour cream, lemon juice, zest, vanilla, and salt
- Pour filling over crust evenly
- Bake at 160°C (320°F) for 50–55 minutes
- Turn off oven and cool inside with door slightly open
- Refrigerate for at least 4 hours before serving
