Ingredients
  

  • Graham cracker crumbs – 1 ½ cups
  • Melted butter – ½ cup
  • Sugar – ¾ cup
  • Cream cheese softened – 500g
  • Eggs – 3
  • Sour cream – 1 cup
  • Fresh lemon juice – 3 tbsp
  • Orange zest – 1 tbsp
  • Lemon zest – 1 tbsp
  • Vanilla extract – 1 tsp
  • Salt – ¼ tsp

Method
 

  1. Preheat oven to 180°C (350°F)
  2. Mix graham crumbs, melted butter, and 2 tbsp sugar
  3. Press mixture into a springform pan and bake 10 minutes
  4. Beat cream cheese until smooth and creamy
  5. Add remaining sugar and mix well
  6. Add eggs one at a time and mix gently
  7. Stir in sour cream, lemon juice, zest, vanilla, and salt
  8. Pour filling over crust evenly
  9. Bake at 160°C (320°F) for 50–55 minutes
  10. Turn off oven and cool inside with door slightly open
  11. Refrigerate for at least 4 hours before serving

Notes

Always use room temperature ingredients for a smooth texture
Do not overmix the batter to avoid cracks
Fresh citrus juice gives the best flavor
Let cheesecake cool slowly to prevent cracking
Chill overnight for the best taste and texture
