Method
- In a bowl, mix shredded coconut with sweetened condensed milk and vanilla extract until well combined.
- Press the mixture into a parchment-lined tray and flatten evenly.
- Melt chocolate chips with coconut oil until smooth.
- Spread melted chocolate over the coconut layer.
- Sprinkle extra coconut or toppings if desired.
- Chill in the refrigerator for 30 minutes until firm.
- Cut into bars and serve.
