Ingredients
  

  • 1 cup short-grain rice
  • 2 cups water
  • 1 can 400ml coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup raisins optional
  • Fresh mango or toasted coconut for topping, optional

Method
 

  1. Add rice and water to a pot and bring to a boil
  2. Reduce the heat and simmer until the water is absorbed
  3. Pour in coconut milk, sugar, and salt, and stir well
  4. Cook on low heat, stirring occasionally, until thick and creamy
  5. Add vanilla extract, cinnamon, and raisins, and mix well
  6. Adjust consistency with a splash of milk if needed
  7. Serve warm or chilled with your favorite toppings

Notes

Use full-fat coconut milk for extra creaminess
Stir frequently to prevent sticking or burning
Adjust sugar according to your taste preference
Add cardamom or nutmeg for extra flavor depth
Store leftovers in the fridge for up to 3–4 days
