Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 can 10.5 oz cream of mushroom soup
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup frozen corn
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 bag 28–32 oz frozen tater tots
  • ½ cup cooked and crumbled bacon optional
  • 2 tablespoons chopped fresh parsley optional garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef and diced onion over medium heat until browned.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Drain excess grease from the skillet.
  5. Stir in cream of mushroom soup, sour cream, corn, chili powder, smoked paprika, salt, and pepper.
  6. Spread the beef mixture evenly into a greased 9x13-inch baking dish.
  7. Sprinkle shredded cheddar cheese evenly over the beef layer.
  8. Arrange frozen tater tots in a single layer on top.
  9. Bake uncovered for 35–40 minutes until tater tots are golden and crispy.
  10. Sprinkle bacon and parsley on top before serving if desired.

Notes

  • Substitute ground turkey for a lighter option.
  • Add jalapeños for a spicy kick.
  • Use cream of chicken soup instead of mushroom if preferred.
  • For extra crispiness, broil for 2–3 minutes at the end.
  • Let casserole rest for 5 minutes before serving to set properly.
