Ingredients
  

  • 1 cup white chocolate chips
  • 4 oz cream cheese softened
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Extra powdered sugar or coconut flakes for coating

Method
 

  1. Melt the white chocolate chips in the microwave in short intervals, stirring until smooth.
  2. Beat the softened cream cheese in a bowl until smooth and creamy.
  3. Add lemon zest, lemon juice, powdered sugar, vanilla extract, and salt, then mix well.
  4. Stir the melted white chocolate into the mixture until fully combined and thick.
  5. Cover and refrigerate the mixture for about 1 hour until firm.
  6. Scoop small portions and roll into 1-inch balls using your hands.
  7. Roll each truffle in powdered sugar or coconut flakes.
  8. Chill the finished truffles for 20–30 minutes before serving.

Notes

Use fresh lemon zest for the best bright citrus flavor.
Chill the mixture well so the truffles roll easily.
Store truffles in an airtight container in the refrigerator.
You can freeze the truffles for up to 2 months.
