Ingredients
  

  • Graham cracker crumbs – 1 ½ cups
  • Melted butter – 6 tablespoons
  • Cream cheese softened – 16 oz
  • Powdered sugar – ¾ cup
  • Vanilla extract – 1 teaspoon
  • Heavy whipping cream – 1 cup
  • Fresh strawberries or mixed berries – for topping
  • Chocolate or caramel sauce – optional drizzle

Method
 

  1. Mix graham cracker crumbs and melted butter until combined.
  2. Press the mixture into lined muffin cups to form the crust.
  3. Place the crusts in the refrigerator while preparing the filling.
  4. Beat softened cream cheese until smooth and creamy.
  5. Add powdered sugar and vanilla extract and mix well.
  6. Whip the heavy cream until soft peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture.
  8. Spoon or pipe the filling over the chilled crusts.
  9. Refrigerate for at least 4 hours or until set.
  10. Top with berries or drizzle with chocolate or caramel before serving.

Notes

Always use softened cream cheese for a smooth filling.
Chill the cheesecakes long enough so they hold their shape.
You can swap graham crackers with crushed digestive biscuits or cookies.
Add lemon zest or fruit puree for extra flavor.
