Ingredients
  

  • 1 cup unsalted butter softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup raisins

Method
 

  1. Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a large bowl, cream butter, brown sugar, and granulated sugar until fluffy.
  3. Add eggs and vanilla extract and mix until well combined.
  4. In another bowl, whisk flour, baking soda, cinnamon, and salt.
  5. Gradually mix dry ingredients into the wet mixture.
  6. Stir in rolled oats and raisins until evenly combined.
  7. Scoop tablespoon-sized dough portions onto the prepared baking tray.
  8. Bake for 10–12 minutes until edges are golden brown.
  9. Cool cookies on a wire rack before serving.

Notes

Use room temperature butter for smoother mixing.
For extra softness, slightly underbake the cookies.
