Easy Oatmeal Raisin Cookies Recipe

Ingredients
  

  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup raisins

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix oats, flour, baking soda, cinnamon, and salt in a bowl.
  3. In another bowl beat butter, brown sugar, and granulated sugar until creamy.
  4. Add egg and vanilla extract and mix until smooth.
  5. Combine dry ingredients with wet ingredients and mix well.
  6. Fold in raisins evenly through the dough.
  7. Scoop tablespoon-sized portions of dough onto the baking sheet.
  8. Bake for 10–12 minutes until edges turn golden.
  9. Cool on a rack before serving.

Notes

Use old-fashioned rolled oats for the best chewy texture.
Do not overbake, or cookies will become dry.
Chill the dough for 20 minutes if you want thicker cookies.
You can add chopped walnuts for extra crunch.
