Method
- Cook orzo in salted boiling water until al dente, then drain and set aside
- Heat 1 tbsp olive oil in a pan and cook shrimp with paprika, salt, and pepper until pink, then remove
- Add remaining oil to the same pan and sauté onion until soft, then add garlic and cook briefly
- Pour in chicken broth and bring to a simmer, then stir in heavy cream
- Add cooked orzo and mix well until coated and slightly thickened
- Stir in Parmesan cheese until melted and creamy
- Return shrimp to the pan and mix gently
- Add lemon juice and garnish with fresh parsley before serving
Notes
Do not overcook shrimp, as they turn rubbery quickly
Add extra broth when reheating to maintain creaminess
Use freshly grated Parmesan for better texture and flavor
