Ingredients

  • 12 oz 340g pasta (spaghetti or fettuccine)
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Red pepper flakes optional
  • Fresh parsley chopped (for garnish)
  • Lemon wedges optional, for serving

Method

  1. Cook pasta in salted boiling water until al dente, reserving ½ cup pasta water.
  2. Heat butter and olive oil in a pan over medium heat.
  3. Add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in heavy cream and simmer for 2–3 minutes.
  5. Gradually add Parmesan cheese, stirring until smooth and creamy.
  6. Toss cooked pasta into the sauce, adding reserved pasta water if needed.
  7. Season with salt, pepper, and red pepper flakes (if using).
  8. Garnish with fresh parsley and serve with lemon wedges if desired.

Notes

  • Freshly grated Parmesan melts better than pre-shredded.
  • Don’t overcook the pasta; al dente is ideal.
  • Add pasta water gradually to adjust the sauce thickness.
  • Can add grilled chicken or veggies for variation.
