Ingredients
  

  • Chicken breasts or boneless chicken thighs
  • Olive oil
  • Fresh lemon juice
  • Garlic cloves minced
  • Dried oregano
  • Paprika
  • Salt
  • Black pepper
  • Greek yogurt optional for tender marinade
  • Lemon zest
  • Fresh parsley chopped, for garnish

Method
 

  1. In a bowl mix olive oil, lemon juice, garlic, oregano, paprika, salt, pepper, and lemon zest.
  2. Add Greek yogurt if using and whisk until the marinade is smooth.
  3. Place chicken into the marinade and coat evenly.
  4. Cover and marinate for at least 30 minutes or up to 4 hours for best flavor.
  5. Preheat grill to medium-high heat.
  6. Place marinated chicken on the grill and cook for 5–7 minutes per side.
  7. Cook until chicken reaches an internal temperature of 165°F (75°C).
  8. Remove from grill and let the chicken rest for 5 minutes.
  9. Garnish with fresh parsley and serve with lemon wedges.

Notes

Marinating longer gives deeper flavor and juicier chicken.
Chicken thighs stay more tender and are great for grilling.
You can bake this recipe in the oven at 400°F (200°C) for about 20–25 minutes.
Serve with Greek salad, rice, pita bread, or tzatziki sauce.
