Ingredients
  

  • 2 grilled chicken breasts sliced
  • 2 cups mixed lettuce or greens
  • 1/2 cup cherry tomatoes halved
  • 1/2 cucumber sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup corn kernels optional
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Method
 

  1. Season chicken with salt, pepper, and a little olive oil, then grill until fully cooked.
  2. Let the chicken rest, then slice into strips.
  3. In a large bowl, combine lettuce, tomatoes, cucumber, onion, and corn.
  4. Add sliced grilled chicken on top of the salad.
  5. Drizzle olive oil and lemon juice over the salad.
  6. Toss gently to combine all ingredients.
  7. Serve fresh and enjoy immediately.

Notes

  • Add avocado or cheese for extra richness.
  • Use your favorite dressing instead of lemon and olive oil if desired.
