Ingredients
  

  • 2 cups fresh dandelion greens washed and trimmed
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 small onion chopped
  • 1 teaspoon lemon juice
  • Salt to taste
  • Black pepper to taste
  • Optional chili flakes
  • Optional toasted nuts or seeds

Method
 

  1. Wash dandelion greens thoroughly and drain well.
  2. Heat olive oil in a pan over medium heat.
  3. Add chopped onion and sauté until soft and slightly golden.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Add dandelion greens and cook until wilted (about 3–5 minutes).
  6. Season with salt, pepper, and lemon juice.
  7. Mix well and cook for another minute.
  8. Remove from heat and top with optional nuts or seeds before serving.

Notes

Use young dandelion leaves for a milder taste.
Avoid overcooking to keep nutrients intact.
Add a splash of vinegar for extra tang if desired.
Ensure greens are pesticide-free before using.
Pairs well with grilled meats or as a warm salad base.
