Method
- In a bowl, mix warm water, honey, and yeast; let it bubble 5–10 min.
- In a large bowl, combine flour, oats, and salt.
- Add yeast mixture and oil to dry ingredients; stir until a sticky dough forms.
- Knead dough on a floured surface for 8–10 min until smooth and elastic.
- Place dough in an oiled bowl, cover, and let rise 1–1.5 hours until doubled.
- Punch down dough, shape into a loaf, and place in a greased 9x5-inch pan; sprinkle oats on top if desired.
- Cover and let rise 30–40 min until puffy.
- Preheat oven to 375°F (190°C) and bake 30–35 min until golden brown.
- Remove from pan and cool on a wire rack before slicing.
Notes
- Use warm, not hot, water to avoid killing yeast.
- Dough should be slightly sticky for best texture.
- Extra oats on top give a beautiful bakery-style finish.
- Store covered at room temperature for 3 days or freeze for longer storage.
