Honey Oatmeal Whole Wheat Bread

Ingredients
  

  • 2 ½ cups whole wheat flour
  • 1 cup rolled oats
  • 2 tablespoons honey
  • 1 packet 2 ¼ teaspoons active dry yeast
  • 1 teaspoon salt
  • 1 ½ cups warm water
  • 2 tablespoons olive oil or melted butter
  • 2 tablespoons rolled oats for topping, optional

Method
 

  1. In a bowl combine warm water, honey, and yeast and let sit for 5–10 minutes until foamy.
  2. In a large mixing bowl whisk together whole wheat flour, rolled oats, and salt.
  3. Pour the yeast mixture and olive oil into the dry ingredients and mix until a dough forms.
  4. Knead the dough for 8–10 minutes until smooth and slightly sticky.
  5. Place dough in a greased bowl, cover, and let it rise for 1–1.5 hours until doubled in size.
  6. Punch down the dough and shape it into a loaf.
  7. Place the loaf into a greased 9×5 inch bread pan and sprinkle oats on top if desired.
  8. Cover and let rise again for about 30–40 minutes.
  9. Bake in a preheated oven at 375°F (190°C) for 30–35 minutes until golden brown.
  10. Remove from the pan and let the bread cool on a rack before slicing.

Notes

Use warm water (not hot) to activate the yeast properly.
For softer bread, mix half whole wheat flour and half all-purpose flour.
Add seeds like sunflower or flax for extra nutrition.
Store bread in an airtight container for up to 4 days or freeze slices for longer storage.
