Method
- In a bowl combine warm water, honey, and yeast and let sit for 5–10 minutes until foamy.
- In a large mixing bowl whisk together whole wheat flour, rolled oats, and salt.
- Pour the yeast mixture and olive oil into the dry ingredients and mix until a dough forms.
- Knead the dough for 8–10 minutes until smooth and slightly sticky.
- Place dough in a greased bowl, cover, and let it rise for 1–1.5 hours until doubled in size.
- Punch down the dough and shape it into a loaf.
- Place the loaf into a greased 9×5 inch bread pan and sprinkle oats on top if desired.
- Cover and let rise again for about 30–40 minutes.
- Bake in a preheated oven at 375°F (190°C) for 30–35 minutes until golden brown.
- Remove from the pan and let the bread cool on a rack before slicing.
Notes
Use warm water (not hot) to activate the yeast properly.
For softer bread, mix half whole wheat flour and half all-purpose flour.
Add seeds like sunflower or flax for extra nutrition.
Store bread in an airtight container for up to 4 days or freeze slices for longer storage.
