- Heat oil in a large pan over medium heat.
- Add chopped onions and cook until golden brown.
- Stir in garlic and ginger and cook for 1 minute.
- Add tomatoes and cook until soft and blended.
- Mix in turmeric, chili powder, coriander, cumin, and salt.
- Add meat and cook for 5–7 minutes until lightly browned.
- Pour in water or broth and stir well.
- Cover and simmer for 35–45 minutes until meat becomes tender.
- Sprinkle garam masala and mix gently.
- Add yogurt or coconut milk if you want a creamy curry.
- Garnish with fresh cilantro and serve hot.
Notes
Use fresh spices for the best flavor.
