Ingredients
  

  • 4 chicken breasts or thighs – boneless skin-on preferred
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • Optional: fresh herbs rosemary, thyme, parsley
  • Optional: a squeeze of lemon

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken dry with paper towels.
  3. Mix olive oil, garlic powder, paprika, onion powder, salt, and pepper.
  4. Rub the mixture all over the chicken.
  5. Arrange chicken on a baking tray, leaving space between pieces.
  6. Bake for 25–30 mins for breasts or 35–40 mins for thighs.
  7. Optional: Broil 2–3 mins for extra golden skin.
  8. Let rest 5–10 mins before slicing and serving.

Notes

  • Don’t overcrowd the tray, or the chicken will steam, not crisp.
  • Use a meat thermometer to ensure 165°F (74°C) internal temp.
  • Can swap chicken parts, oils, or spices based on preference.
  • Baking with veggies works great for a one-pan meal.
  • Leftovers can be reheated in the oven or air fryer for the best results.
