Ingredients
  

  • ½ cup coconut oil melted
  • ½ cup coconut cream
  • ¼ cup unsweetened shredded coconut
  • 2 –3 tbsp powdered erythritol or preferred sweetener
  • 1 tsp vanilla extract
  • Pinch of salt

Method
 

  1. In a bowl, mix melted coconut oil and coconut cream until smooth.
  2. Add sweetener, vanilla extract, and salt; whisk well.
  3. Stir in shredded coconut.
  4. Pour mixture into silicone molds or a lined tray.
  5. Freeze for about 1 hour or until firm.
  6. Remove from molds and store in the refrigerator or freezer.

Notes

  • Keep refrigerated as they melt quickly at room temperature.
  • Adjust sweetness to taste.
  • Add cocoa powder or nuts for flavor variations.
