Ingredients
  

  • 1 lb breakfast sausage
  • 8 large eggs
  • 1 cup heavy cream
  • 1 ½ cups shredded cheddar cheese
  • ½ cup mozzarella cheese
  • 1 small onion chopped
  • 1 bell pepper diced
  • ½ tsp garlic powder
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cook sausage in a pan until browned, then drain excess fat.
  3. Sauté onion and bell pepper for 2–3 minutes until slightly soft.
  4. Whisk eggs, heavy cream, garlic powder, salt, and pepper in a bowl.
  5. Add cooked sausage, veggies, and half of the cheese into mixture.
  6. Pour mixture into baking dish and spread evenly.
  7. Top with remaining cheese.
  8. Bake for 30–35 minutes until golden and set.
  9. Let it rest for 5–10 minutes before slicing.

Notes

  • You can easily prep this the night before and bake in the morning.
  • Don’t overbake or the eggs may become rubbery.
  • Add spinach, mushrooms, or jalapeños for extra flavor boost.
  • Great for meal prep—stores well in fridge for up to 4 days.
