Ingredients
  

  • Chicken breasts boneless, skinless – 4 pieces
  • Olive oil – 2 tbsp
  • Butter – 2 tbsp
  • Garlic minced – 4 cloves
  • Heavy cream – 1 cup
  • Chicken broth – 1/2 cup
  • Parmesan cheese grated – 1/2 cup
  • Spinach – 2 cups
  • Sun-dried tomatoes – 1/2 cup
  • Italian seasoning – 1 tsp
  • Salt – to taste
  • Black pepper – to taste

Method
 

  1. Season chicken with salt and pepper
  2. Heat olive oil in a pan over medium heat
  3. Cook chicken until golden on both sides and set aside
  4. In the same pan melt butter and sauté garlic
  5. Add chicken broth and heavy cream and stir well
  6. Mix in Parmesan cheese, sun-dried tomatoes, and Italian seasoning
  7. Add spinach and cook until wilted
  8. Return chicken to the pan and coat with sauce
  9. Simmer for 5–7 minutes until fully cooked
  10. Serve hot with extra sauce on top

Notes

Use chicken thighs for extra juiciness
Do not overcook chicken to keep it tender
Freshly grated Parmesan gives a better flavor
Let the sauce simmer to thicken naturally
Add chili flakes if you like a spicy kick
