Method
- Season chicken with salt and pepper
- Heat olive oil in a pan over medium heat
- Cook chicken until golden on both sides and set aside
- In the same pan melt butter and sauté garlic
- Add chicken broth and heavy cream and stir well
- Mix in Parmesan cheese, sun-dried tomatoes, and Italian seasoning
- Add spinach and cook until wilted
- Return chicken to the pan and coat with sauce
- Simmer for 5–7 minutes until fully cooked
- Serve hot with extra sauce on top
Notes
Use chicken thighs for extra juiciness
Do not overcook chicken to keep it tender
Freshly grated Parmesan gives a better flavor
