Ingredients
  

  • 8 lamb chops
  • 4 medium potatoes cubed
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp fresh rosemary chopped
  • Salt and pepper to taste
  • 1 tsp paprika optional

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  2. Toss potato cubes with olive oil, garlic, rosemary, salt, and pepper.
  3. Spread potatoes on the baking sheet and roast for 20-25 minutes until golden and crisp.
  4. Season lamb chops with salt, pepper, and paprika.
  5. Heat a grill pan or skillet over medium-high heat.
  6. Sear lamb chops 3-4 minutes per side until desired doneness.
  7. Serve lamb chops hot alongside roasted rosemary potatoes.
