Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter softened
  • 3/4 cup sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. Cream butter and sugar together until light and fluffy.
  3. Mix in the egg, lemon zest, lemon juice, and vanilla extract.
  4. In another bowl whisk flour, baking powder, and salt together.
  5. Gradually combine the dry ingredients with the wet mixture.
  6. Scoop small portions of dough onto the prepared baking tray.
  7. Bake for 10–12 minutes until the edges are lightly golden.
  8. Let cookies cool and dust with powdered sugar before serving.

Notes

For a stronger lemon flavor, add extra lemon zest.
Chill the dough for 15 minutes if it feels too soft.
Do not overbake to keep the cookies soft and tender.
Store cookies in an airtight container for up to 4 days.
