Ingredients
  

  • Ground beef – 500g
  • Onion chopped – 1 medium
  • Garlic minced – 3 cloves
  • Kidney beans drained – 1 can
  • Diced tomatoes – 1 can
  • Tomato paste – 2 tbsp
  • Beef broth – 1 cup
  • Chili powder – 1 tsp
  • Cumin powder – 1 tsp
  • Paprika – 1/2 tsp
  • Salt – to taste
  • Black pepper – to taste
  • Olive oil – 1 tbsp
  • Optional toppings: sour cream shredded cheese, cilantro

Method
 

  1. Heat olive oil in a large pot over medium heat
  2. Add chopped onion and cook until soft
  3. Stir in garlic and cook for 30 seconds
  4. Add ground beef and cook until browned
  5. Mix in tomato paste and cook for 1–2 minutes
  6. Pour in diced tomatoes and beef broth
  7. Add kidney beans and all spices
  8. Stir well and bring to a gentle simmer
  9. Cook for 25–30 minutes, stirring occasionally
  10. Adjust seasoning and serve hot with toppings

Notes

 
Simmer longer for thicker and richer chili
Add extra chili powder for more heat
Tastes even better the next day
Store leftovers in the fridge for up to 3 days
Freeze for up to 3 months
