Method
- Preheat oven to 375°F (190°C)
- Cook ground beef in a pan until browned
- Add onion and garlic, cook until soft
- Stir in taco seasoning, salsa, beans, and corn
- Simmer mixture for 5 minutes
- Spread enchilada sauce in baking dish
- Layer tortillas, beef mixture, and cheese
- Repeat layers until ingredients are used
- Top with remaining cheese
- Bake for 25–30 minutes until bubbly
- Rest for 10 minutes before slicing
- Garnish with sour cream and cilantro
Notes
Use corn tortillas for a more authentic flavor
Add jalapeños for extra spice
