MEXICAN LASAGNA RECIPE

Ingredients
  

  • Ground beef – 1 lb
  • Taco seasoning – 1 packet
  • Salsa – 1 cup
  • Black beans drained – 1 can
  • Corn kernels – 1 cup
  • Cheddar cheese shredded – 2 cups
  • Mozzarella cheese shredded – 1 cup
  • Flour tortillas – 6–8
  • Onion diced – 1 small
  • Garlic minced – 2 cloves
  • Enchilada sauce – ½ cup
  • Sour cream – ½ cup
  • Fresh cilantro – for garnish

Method
 

  1. Preheat oven to 375°F (190°C)
  2. Cook ground beef in a pan until browned
  3. Add onion and garlic, cook until soft
  4. Stir in taco seasoning, salsa, beans, and corn
  5. Simmer mixture for 5 minutes
  6. Spread enchilada sauce in baking dish
  7. Layer tortillas, beef mixture, and cheese
  8. Repeat layers until ingredients are used
  9. Top with remaining cheese
  10. Bake for 25–30 minutes until bubbly
  11. Rest for 10 minutes before slicing
  12. Garnish with sour cream and cilantro

Notes

Use corn tortillas for a more authentic flavor
Add jalapeños for extra spice
Let the lasagna rest before cutting to hold layers
Great for meal prep and leftovers
Swap beef with turkey or veggies if preferred
