- Preheat oven to 325°F (160°C)
- Mix graham cracker crumbs, melted butter, and sugar in a bowl
- Press 1 tablespoon of the mixture into each muffin cup
- Beat cream cheese and sugar until smooth
- Add eggs one at a time and mix well
- Stir in vanilla extract and sour cream
- Pour filling over crusts in muffin cups
- Bake for 15–18 minutes until centers are slightly jiggly
- Cool completely and refrigerate for at least 2 hours
- Add toppings of choice and serve
Notes
Use room temperature cream cheese for a smooth filling
Do not overmix to avoid cracks in cheesecake
Chill well before serving for the best texture
