Mini Cheesecake Bites Recipe

Ingredients
  

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 2 tbsp sugar
  • 2 cups cream cheese softened
  • ½ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream

Method
 

  1. Preheat oven to 325°F (160°C)
  2. Mix graham cracker crumbs, melted butter, and sugar in a bowl
  3. Press 1 tablespoon of the mixture into each muffin cup
  4. Beat cream cheese and sugar until smooth
  5. Add eggs one at a time and mix well
  6. Stir in vanilla extract and sour cream
  7. Pour filling over crusts in muffin cups
  8. Bake for 15–18 minutes until centers are slightly jiggly
  9. Cool completely and refrigerate for at least 2 hours
  10. Add toppings of choice and serve

Notes

Use room temperature cream cheese for a smooth filling
Do not overmix to avoid cracks in cheesecake
Chill well before serving for the best texture
Top with fruits, chocolate, or caramel for extra flavor
