Ingredients
  

  • 1 ½ cups crushed vanilla cookies
  • 4 oz cream cheese softened
  • 2 tablespoons powdered sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 cup white chocolate melted
  • Optional: coconut flakes or extra powdered sugar for coating

Method
 

  1. Crush the vanilla cookies into fine crumbs.
  2. Mix softened cream cheese, powdered sugar, lemon juice, and lemon zest until smooth.
  3. Add crushed cookies and mix until a soft dough forms.
  4. Chill the mixture for 10–15 minutes if it feels sticky.
  5. Roll mixture into small bite-sized balls.
  6. Place truffles on a lined tray and refrigerate for 20–30 minutes.
  7. Dip each truffle in melted white chocolate.
  8. Add optional toppings if desired.
  9. Chill again for 15 minutes until set.

Notes

Use fresh lemon juice for brighter flavor.
Chill longer if the mixture becomes too soft.
Store in an airtight container in the refrigerator for up to 5 days.
Freeze for up to 2 months for longer storage.
