This no-bake mocha icebox cake is a creamy, chocolatey dessert layered with coffee flavor and soft cookies. It requires zero oven time and is perfect for warm days or last-minute cravings. The longer it chills, the better it tastes—making it ideal for make-ahead treats.

Ingredients
  

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp instant coffee powder
  • 1/4 cup warm water
  • 1 pack of chocolate wafer cookies
  • 1/2 cup chocolate chips
  • Cocoa powder for dusting

Method
 

  1. Dissolve instant coffee in warm water and let it cool
  2. Whip heavy cream, powdered sugar, and vanilla until soft peaks form
  3. Gently fold the cooled coffee mixture into the whipped cream
  4. Quickly dip each cookie into the mocha mixture
  5. Arrange a layer of dipped cookies in a dish
  6. Spread a layer of mocha cream over the cookies
  7. Repeat layers until all ingredients are used
  8. Finish with a top layer of cream and sprinkle chocolate chips
  9. Dust cocoa powder over the top
  10. Refrigerate for at least 6 hours or overnight before serving

Notes

Use cold cream for the best whipping results
Do not soak cookies for too long to avoid sogginess
Chilling overnight gives the best texture and flavor
You can substitute cookies with Oreos (cream removed)
Add chocolate ganache for extra richness if desired
