No-Bake Peanut Butter Oat Cups Recipe

Ingredients
  

  • 2 cups rolled oats
  • 1 cup creamy peanut butter
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 2 tablespoons coconut oil optional

Method
 

  1. In a mixing bowl, combine peanut butter, honey (or maple syrup), vanilla extract, and salt until smooth.
  2. Add rolled oats and mix well until fully coated.
  3. Stir in chocolate chips evenly throughout the mixture.
  4. Line a muffin tin with paper liners or lightly grease it.
  5. Scoop the mixture into each cup and press down firmly.
  6. Place the tray in the refrigerator for 1–2 hours until firm.
  7. Remove from the muffin tin and store in an airtight container in the fridge.

Notes

Press the mixture firmly into the cups so they hold their shape after chilling.
If the peanut butter is too thick, warm it slightly before mixing.
You can swap peanut butter with almond butter or sunflower seed butter.
Store in the refrigerator for up to 1 week or freeze for longer storage.
