Ingredients
  

  • 2 cups green peas fresh or frozen
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium carrot diced
  • 1 celery stalk chopped
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ cup milk or cream optional
  • Fresh parsley for garnish

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook for 3–4 minutes until soft.
  3. Add garlic, carrot, and celery and cook for another 3 minutes.
  4. Stir in the green peas and vegetable broth.
  5. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  6. Blend the soup using an immersion blender until smooth.
  7. Stir in milk or cream if desired and season with salt and pepper.
  8. Serve hot and garnish with fresh parsley.

Notes

Frozen peas work perfectly and keep the soup naturally sweet.
If the soup becomes too thick, add extra broth or water to adjust consistency.
For a richer flavor, add a small potato while cooking and blend it with the soup.
Serve with toasted bread or crackers for a complete meal.
