Ingredients
  

  • 4 cups peaches peeled and sliced
  • cups fresh raspberries
  • ¾ cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 1 pie crust
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ tsp cinnamon
  • ½ cup cold butter cubed

Method
 

  1. Preheat oven to 375°F (190°C)
  2. In a bowl mix peaches, raspberries sugar, cornstarch lemon juice vanilla and cinnamon
  3. Place pie crust into a pie dish and press evenly
  4. Pour fruit mixture into the crust
  5. In another bowl mix flour, brown sugar, granulated sugar and cinnamon
  6. Add cold butter and crumble with fingers until a crumbly texture forms
  7. Sprinkle the crumble evenly over the filling
  8. Bake for 40–45 minutes until golden brown and bubbly
  9. Let pie cool for at least 30 minutes before slicing

Notes

Use cold butter for the perfect crumbly topping
Do not skip cornstarch, or the filling will be runny
Frozen fruit can be used, but thaw and drain first
Let the pie cool before slicing for clean cuts
Serve warm with vanilla ice cream for the best flavor
