Method
- In a small saucepan, combine sugar and water; heat until sugar dissolves to make simple syrup.
- Let syrup cool completely.
- In a blender, combine peaches, cooled syrup, and lemon juice; blend until smooth.
- Pour mixture into a shallow dish or ice cream maker.
- Freeze for at least 4 hours, stirring every 30–60 minutes if not using an ice cream maker.
- Scoop into bowls and garnish with fresh mint if desired.
Notes
- Use ripe, juicy peaches for the best flavor.
- Can substitute honey or agave for sugar.
- Sorbet can be stored in an airtight container in the freezer for up to 1 week.
