Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup pineapple juice
  • 1 cup pineapple chunks
  • 2 tablespoons freshly grated ginger
  • 3 cloves garlic minced
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili flakes optional
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Mix pineapple juice ginger garlic soy sauce honey olive oil lime juice and chili flakes in a bowl
  2. Place chicken in marinade and coat well then refrigerate for at least 1 hour
  3. Preheat grill to medium-high heat
  4. Remove chicken from marinade and place on grill
  5. Cook chicken for 5–7 minutes per side until fully cooked
  6. Grill pineapple chunks for 2–3 minutes until caramelized
  7. Remove chicken and let it rest for 5 minutes
  8. Serve topped with grilled pineapple and extra glaze if desired

Notes

Marinate overnight for a deeper flavor
Use chicken thighs for extra juiciness
Do not overcook to avoid dry chicken
Oil grill grates to prevent sticking
Adjust chili flakes based on spice preference
