Method
- Mix pineapple juice ginger garlic soy sauce honey olive oil lime juice and chili flakes in a bowl
- Place chicken in marinade and coat well then refrigerate for at least 1 hour
- Preheat grill to medium-high heat
- Remove chicken from marinade and place on grill
- Cook chicken for 5–7 minutes per side until fully cooked
- Grill pineapple chunks for 2–3 minutes until caramelized
- Remove chicken and let it rest for 5 minutes
- Serve topped with grilled pineapple and extra glaze if desired

Marinate overnight for a deeper flavor
Use chicken thighs for extra juiciness
Do not overcook to avoid dry chicken
