Method
- Combine sugar and water in a small saucepan, heat until sugar dissolves, then let cool.
- Blend pineapple chunks until smooth.
- Add simple syrup, lime juice, and salt to pineapple puree, blend again.
- Chill mixture in the fridge for 30–60 minutes.
- Pour mixture into a freezer-safe container, freeze for 1 hour, stirring every 30 minutes until firm.
- Scoop into bowls, add mint if desired, and serve.
Notes
Use frozen pineapple if fresh isn’t available, adjust sugar to taste, and let sorbet soften slightly before scooping for the best texture.
